The Nitrogen Stamp Unit by Dohmeyer is an innovative piece of equipment designed for quickly shaping, leveling, and flattening soft, sticky foods like ice cream, fruit purées, and thick desserts.Instead of using a traditional metal stamp that physically touches the food, this unit uses a protective layer of cold liquid nitrogen vapor. CryoRoll is a cryogenic freezer designed for high-performance IQF freezing of small pieces of meat, cheese, pizza toppings and fruits.
